Green Tea
Green Tea leaves are withered and steamed, which is actually a really good thing, as it gives the tea a fresh flavour closest to the taste of the leaf itself. And as the least processed variety, green tea contains the most antioxidant compounds, most notably EGCG. Its potential health benefits are currently the subject of lots of amazing scientific research (have a look at this link if you’d like to read a bit more http://en.wikipedia.org/wiki/EGCG).
Green teas come predominantly from China and Japan. There are many varieties and they tend to have wonderful names, including Chun Mee, Dragonwell, Gunpowder, Hojcha, Idulgashinna, Matcha and Sencha.
